Ingredients:
Toasted, Buttered Bread
1/2 cup Shelled Fava Beans
1/4 cup Soft Cheese (Farmer's, Feta, Goat, Plant Based)
For the Topping:
Olive Oil, Salt, Pepper, Lemon Zest, Hot Pepper Flakes
Directions:
Remove the Fava Beans from the large outer shell.
Boil some salted water and drop in the beans and cook for 3 to 5 minutes, depending on their size. You want them soft, so you can partially mash them.
Cool the beans in an ice bath, and then pop the inner beans out into a bowl.
Mash half of the beans, and leave the rest halved. Add salt, pepper, and olive oil.
Place your bean mixture on top of buttered toast, and then top with cheese, salt, pepper, lemon zest, and red pepper flakes.
