Swiss Chard, Mushroom, Bacon, Lemon Pasta



Creamy Swiss Chard & Bacon Pasta

Servings: 4 | Time: 40 minutes

Ingredients:

  • 12 oz pasta (spaghetti, penne, or fettuccine)
  • 4 slices bacon, chopped
  • 3 cloves garlic, minced
  • 1 cup mushrooms, sliced
  • 1 bunch Swiss chard, stems chopped, leaves thinly sliced
  • ½ teaspoon red pepper flakes (adjust to taste)
  • 2 tablespoons flour
  • 1¾ cups milk 
  • ½ cup grated Parmesan cheese
  • Juice of 2 lemons
  • Salt and pepper, to taste

Instructions:

  1. Cook the pasta:

    • Boil pasta in salted water according to package directions.
    • Drain and set aside.
  2. Cook the bacon:

    • In a large pan over medium heat, cook the bacon until crispy.
    • Remove and place on a paper towel-lined plate.
  3. Sauté the vegetables:

    • In the same pan with the bacon fat, sauté garlic and mushrooms for about 3 minutes until soft.
    • Add Swiss chard stems and cook for another 2 minutes.
    • Toss in the thinly sliced Swiss chard leaves and red pepper flakes, cooking until wilted.
    • Sprinkle in the flour and stir well to coat the vegetables, cooking for 1 minute.
  4. Make the sauce:

    • Reduce heat to low and slowly stir in the milk, whisking to prevent lumps.
    • Add Parmesan cheese and lemon juice, stirring to combine.
    • Let the sauce simmer for about 15 minutes, stirring occasionally, until thickened and reduced.
  5. Combine and serve:

    • Add the cooked pasta and bacon back to the pan, tossing to coat.
    • Season with salt and pepper to taste.
  6. Garnish and enjoy!

    • Serve hot, topped with extra Parmesan and a sprinkle of red pepper flakes.
