
Swiss Chard, Mushroom, Bacon, Lemon Pasta

Creamy Swiss Chard & Bacon Pasta
Servings: 4 | Time: 40 minutes
Ingredients:
- 12 oz pasta (spaghetti, penne, or fettuccine)
- 4 slices bacon, chopped
- 3 cloves garlic, minced
- 1 cup mushrooms, sliced
- 1 bunch Swiss chard, stems chopped, leaves thinly sliced
- ½ teaspoon red pepper flakes (adjust to taste)
- 2 tablespoons flour
- 1¾ cups milk
- ½ cup grated Parmesan cheese
- Juice of 2 lemons
- Salt and pepper, to taste
Instructions:

Cook the pasta:
- Boil pasta in salted water according to package directions.
- Drain and set aside.

Cook the bacon:
- In a large pan over medium heat, cook the bacon until crispy.
- Remove and place on a paper towel-lined plate.

Sauté the vegetables:
- In the same pan with the bacon fat, sauté garlic and mushrooms for about 3 minutes until soft.
- Add Swiss chard stems and cook for another 2 minutes.
- Toss in the thinly sliced Swiss chard leaves and red pepper flakes, cooking until wilted.
- Sprinkle in the flour and stir well to coat the vegetables, cooking for 1 minute.

Make the sauce:
- Reduce heat to low and slowly stir in the milk, whisking to prevent lumps.
- Add Parmesan cheese and lemon juice, stirring to combine.
- Let the sauce simmer for about 15 minutes, stirring occasionally, until thickened and reduced.

Combine and serve:
- Add the cooked pasta and bacon back to the pan, tossing to coat.
- Season with salt and pepper to taste.

Garnish and enjoy!
- Serve hot, topped with extra Parmesan and a sprinkle of red pepper flakes.
