Crispy Zucchini Rings

Fresh zucchini gets a delicious makeover with this simple, crispy recipe. These golden zucchini rings are crunchy on the outside, tender on the inside, and perfect as an appetizer, snack, or side dish. Bake them for a lighter option or fry them for extra crunch. Pair them with your favorite dipping sauce and enjoy a tasty way to use garden-fresh zucchini.
Ingredients
1 medium zucchini
2 eggs, beaten
1 cup all-purpose flour
1 teaspoon garlic powder
1 teaspoon salt
½ teaspoon black pepper
1½ cups panko breadcrumbs
Oil for frying (optional)
Instructions
Slice the zucchini in half lengthwise. Using a melon baller, scoop out the soft seed center. Cut each half into thick rings.
In one shallow bowl, whisk the eggs. In a second bowl, combine the flour, garlic powder, salt, and pepper. Place the panko breadcrumbs in a third bowl.
Dip each zucchini ring into the egg, then coat it in the seasoned flour. Dip it back into the egg, then coat it with the panko breadcrumbs.
To Bake
Arrange the breaded zucchini rings on a parchment-lined baking sheet. Bake at 350°F for 20–30 minutes, turning halfway through, until golden brown and crispy.
To Fry
Heat about 1 inch of oil in a skillet over medium heat. Fry the zucchini rings for 2–3 minutes per side, or until golden brown. Transfer to a paper towel-lined plate to drain.
Serve warm with your favorite dipping sauce such as ranch, marinara, garlic aioli, or spicy mayo.
Tips
Sprinkle with Parmesan cheese immediately after cooking for extra flavor.
Try adding Italian seasoning or paprika to the flour for a different twist.
These are best served fresh while they're hot and crispy.
