Garden Dill Pickle Relish
Description
Fresh cucumbers, sweet red peppers, garlic, dill, and a touch of jalapeño come together to create a crisp, flavorful dill pickle relish that's perfect for burgers, hot dogs, potato salad, egg salad, tuna salad, and so much more. Instead of shredding the vegetables, this version is finely chopped for a heartier texture that highlights the fresh flavors of the garden. Ingredients
7 cups medium to large cucumbers, finely chopped
3 jalapeños, minced (remove the seeds for a milder relish)
2 red bell peppers, minced
2¾ cups apple cider vinegar
6 cloves garlic, halved
2½ tablespoons pickling salt
1½ teaspoons dill seed
1 teaspoon mustard seed
1 teaspoon celery seed
Instructions
Wash the cucumbers, peppers, and jalapeños. Finely chop the cucumbers into small relish-sized pieces. Mince the red peppers and jalapeños.
In a large stainless steel pot, combine the apple cider vinegar, garlic, pickling salt, dill seed, mustard seed, and celery seed. Bring the mixture to a boil.
Add the chopped cucumbers, minced red peppers, and jalapeños to the pot. Return the mixture to a boil, then reduce the heat and simmer for 10 minutes, stirring occasionally.
Ladle the hot relish into clean, hot pint jars, leaving ½ inch of headspace.
Remove any air bubbles, wipe the rims with a clean damp cloth, and apply the lids and bands until fingertip tight.
Place the jars into a boiling water bath canner, ensuring the jars are completely covered with water. Process for 15 minutes, adjusting for altitude if necessary.
Carefully remove the jars and allow them to cool undisturbed for 12 to 24 hours. Check that each lid has sealed before storing in a cool, dark place.
For the best flavor, allow the relish to rest for at least two weeks before opening.
Tips
Finely chopping the cucumbers creates a chunky, homemade-style relish with wonderful texture.
Leave the jalapeño seeds in for extra heat or remove them for a milder relish.
This relish is delicious on burgers, hot dogs, brats, sandwiches, deviled eggs, potato salad, macaroni salad, and tuna salad.
