Churro Spice Cupcakes with Cinnamon Crunch & Cream Cheese Frosting
These churro-inspired cupcakes are one of my go-to desserts when I want something comforting with a little flair. They’re sweet but not too sweet, perfectly balanced with warm cinnamon, a light crunch on top, and a creamy frosting that doesn’t overpower the cake. They’re always a hit at gatherings and feel extra special without being fussy.
Ingredients
Cupcakes
1 ½ cups all-purpose flour
1 ½ cups cake flour
1 tablespoon baking powder
½ teaspoon salt
1 tablespoon ground cinnamon
1 cup (2 sticks) unsalted butter, room temperature
1 ¾ cups granulated sugar
4 large eggs, room temperature
2 teaspoons vanilla extract
1 ¼ cups milk
Cinnamon Sugar Crunch Topping
4 tablespoons butter, melted
¼ cup granulated sugar
1 teaspoon ground cinnamon
Cinnamon Cream Cheese Frosting
½ cup (1 stick) butter, softened
1 (8-ounce) cream cheese, softened
½ teaspoon vanilla extract
1 teaspoon ground cinnamon
5 cups confectioners’ sugar
1 tablespoon milk (optional, for consistency)
Instructions
Make the Cupcakes
Preheat oven to 350°F (175°C). Line standard muffin tins with paper liners.
Whisk together both flours, baking powder, salt, and cinnamon.
Cream butter and sugar on medium-high speed until light and fluffy.
Add eggs one at a time, beating well and scraping the bowl as needed.
Mix in vanilla.
Reduce speed to low. Add dry ingredients in three additions, alternating with milk, beginning and ending with flour. Mix just until combined.
Fill liners ¾ full.
Bake 18–22 minutes, until a toothpick comes out clean.
Cool completely on wire racks.
Cinnamon Sugar Crunch
Stir melted butter, sugar, and cinnamon together.
Let cool slightly so it sets into a light crunch.
Cinnamon Cream Cheese Frosting
Beat butter and cream cheese until smooth.
Add vanilla and cinnamon.
Gradually beat in confectioners’ sugar until fluffy.
Add milk if needed for spreading or piping.
Assemble
Frost cooled cupcakes generously.
Finish with cinnamon sugar crunch for texture.
Refrigerate until ready to serve. Set out 20 minutes before serving.
