Artichoke Sausage Pizza Tartlets

Ingredients

Prepared pizza dough

1 cup prepared pizza sauce

1/2 pound Italian sausage, cooked, drained and finely crumbled

3/4 cup grated mozzarella cheese

1/2 can marinated artichoke hearts, drained and finely chopped

Spicy pepper jelly, for topping

Fresh arugula microgreens, for topping

Instructions

  1. Preheat the oven to 400°F. Line a large baking sheet with parchment paper.
  2. Place the prepared pizza dough on a lightly floured surface. Stretch or roll the dough into approximately a 12-by-8-inch rectangle.
  3. Using a 2-inch round cutter, cut the dough into approximately 20 rounds.
  4. Arrange the dough rounds about 1 inch apart on the prepared baking sheet.
  5. Spread a small spoonful of pizza sauce onto each round, leaving a small border around the edge.
  6. Top each tartlet with finely chopped marinated artichoke hearts, grated mozzarella cheese and crumbled Italian sausage.
  7. Bake for 8–10 minutes, or until the cheese is melted and the edges of the dough are lightly golden brown.
  8. Remove from the oven and transfer the tartlets to a cooling rack. Allow them to cool slightly.
  9. Just before serving, add a small spoonful of spicy pepper jelly to each tartlet.
  10. Finish with a few fresh arugula microgreens and serve warm.
