Italian Herbed Caprese Salad with Basil & Marigolds
A Fresh Garden Twist on a Classic
Everyone loves a traditional Caprese salad, but this version takes it to the next level. Marinating fresh garden tomatoes in olive oil and Italian herbs creates incredible flavor before they're paired with creamy mozzarella, fragrant basil, and beautiful marigold petals. It's simple, elegant, and perfect for summer gatherings.
Prep Time: 15 minutes (plus marinating time)
Marinating Time: 2–4 hours
Servings: 4–6
Ingredients
4–5 large ripe tomatoes, sliced
8 oz fresh mozzarella, sliced
¼ cup extra virgin olive oil
Chopped Herbs (I used oregano, parsley, & thyme)
Sea salt, to taste
Freshly cracked black pepper, to taste
Fresh basil leaves
Edible marigold petals (optional, but beautiful
Directions
Arrange the sliced tomatoes in a shallow dish or on a platter.
Drizzle with the olive oil and sprinkle generously with the herbs, sea salt, and black pepper.
Let the tomatoes marinate at room temperature for 2–4 hours, allowing the herbs and olive oil to infuse every bite.
When ready to serve, alternate slices of marinated tomatoes with fresh mozzarella on a serving platter.
Tuck fresh basil leaves between the layers.
Sprinkle with edible marigold petals for a colorful garden-fresh presentation.

The longer the tomatoes marinate, the richer and more flavorful they become. Use tomatoes picked fresh from the garden for the best taste, and always make sure your marigold petals are from flowers that have not been treated with pesticides.
