Ginger-Spiced Shrimp Cocktail with Sweet Chili Lime Sauce
Give classic shrimp cocktail a fresh, spicy twist with ginger, rice vinegar, red pepper flakes, and a sweet chili lime dipping sauce. The shrimp marinate in a bright ginger mixture before being served chilled with a sweet, tangy sauce that has just the right amount of heat.

Ingredients
Ginger-Marinated Shrimp
1/4 cup peeled, thinly sliced fresh ginger
1/2 cup rice vinegar
2 tablespoons sugar
1 teaspoon red pepper flakes
2 pounds large cooked, peeled and deveined shrimp
Sweet Chili Lime Dipping Sauce
1/4 cup sweet chili sauce
2 tablespoons tomato sauce
1 tablespoon Dijon mustard
2 tablespoons fresh lime juice
Instructions
Marinate the Shrimp
In a small saucepan, combine the fresh ginger, rice vinegar, sugar, and red pepper flakes.
Bring the mixture to a boil over medium heat, stirring until the sugar has completely dissolved.
Remove from the heat and transfer the mixture to a large bowl. Allow it to cool completely.
Add the cooked shrimp to the cooled ginger mixture and gently toss to coat.
Cover and refrigerate for at least 1 hour and up to 3 hours.
Drain the shrimp well and discard the marinade and ginger mixture.
Make the Sweet Chili Lime Sauce
In a small bowl, combine the sweet chili sauce, tomato sauce, Dijon mustard, and fresh lime juice.
Whisk until smooth and well combined. Refrigerate until ready to serve.
To Serve
Arrange the chilled shrimp in individual serving cups or cocktail glasses.
Drizzle with a small amount of the Sweet Chili Lime Dipping Sauce or serve the sauce alongside the shrimp for dipping.
For an extra pop of freshness, garnish with a small lime wedge or thin slice of fresh lime.
