From Garden to Table: Garlic Chive Zucchini Patties Celebrate Summer's Harvest

Every gardener knows the moment. One day there are a few zucchini hiding beneath the leaves, and the next, the harvest basket is overflowing. Fortunately, summer's abundance provides endless opportunities to turn simple garden ingredients into memorable meals.

These crispy Garlic Chive Zucchini Patties are proof that humble ingredients can be transformed into something both beautiful and delicious. Made with freshly harvested zucchini, garden-grown garlic chives, dill, and lemon zest, they deliver bright summer flavors wrapped in a golden, crispy crust. Served with homemade ranch dip, they strike the perfect balance between comfort food and garden-fresh cooking.

One of my favorite kitchen tools during zucchini season is my Breville Sous Chef Food Processor. When the garden is producing more zucchini than I can keep up with, shredding pounds of zucchini becomes a cinch. The large-capacity feed chute and powerful shredding disc make quick work of prep, allowing me to spend less time in the kitchen and more time enjoying the harvest.

Growing the Ingredients

Many of the ingredients in this recipe came straight from my garden, grown from seeds and bulbs that thrive in summer gardens.

This season, I planted the Survival Garden Seeds Squash Variety Pack, which provided an abundance of fresh vegetables and herbs for my kitchen. Growing your own food adds another layer of satisfaction when preparing meals like these zucchini patties.

Simple Ingredients, Incredible Flavor

In today's world of elaborate food trends and restaurant-style presentations, it's easy to forget that some of the most satisfying dishes begin with the simplest ingredients. Cooking competitions often remind us that success isn't determined by how expensive an ingredient is, but by how thoughtfully it is prepared and presented.

A basket of zucchini may not seem glamorous, but with a little creativity it can become the centerpiece of a meal.

These patties showcase that philosophy beautifully. Fresh zucchini provides a tender base, while garlic chives contribute a delicate garlic flavor without overpowering the dish. Dill and lemon zest brighten each bite, and a coating of panko breadcrumbs creates a crisp, golden exterior that is as appealing to the eye as it is to the palate.

Part of the joy of gardening is finding new ways to celebrate what is growing just outside the back door. Dishes like these allow home cooks to highlight the natural beauty of their harvest while creating food that feels welcoming and familiar.

Whether served as an appetizer for guests, a side dish at a backyard barbecue, or a light lunch on the porch, these zucchini patties are a reminder that good food doesn't need to be complicated. Sometimes all it takes is a handful of fresh ingredients, a little care, and the willingness to let the garden shine.

Crispy Garlic Chive Zucchini Patties

Serves 6–8

Ingredients

1 pound zucchini (about 3 medium zucchini), grated

2 large eggs

¼ cup chopped garlic chives

3 garlic cloves, grated

2 tablespoons fresh dill, chopped

1 tablespoon lemon zest

1 teaspoon sea salt

Freshly ground black pepper, to taste

2¼ cups panko breadcrumbs, divided

3 tablespoons all-purpose flour

Avocado oil, for frying

For Serving

Homemade ranch dip

Directions

Grate the zucchini using the large holes of a box grater or your Breville Sous Chef food processor. Place the grated zucchini in a clean kitchen towel and squeeze out as much excess moisture as possible.

In a large bowl, whisk the eggs.

Add the zucchini, garlic chives, grated garlic, dill, lemon zest, salt, and several grinds of black pepper.

Stir in 1½ cups of the panko breadcrumbs and the flour until well combined.

Place the remaining ¾ cup panko breadcrumbs in a shallow dish.

Heat a cast-iron skillet over medium heat and coat generously with avocado oil.

Using a ¼-cup measuring cup, scoop the zucchini mixture and form into thin patties.

Coat each patty in the reserved panko breadcrumbs.

Cook for 2–3 minutes per side, or until golden brown and crispy.

Transfer to a paper towel-lined plate to drain.

Serve warm with homemade ranch dip.

Garden Notes

  • Garlic chives provide a milder, sweeter garlic flavor than traditional garlic alone and are a wonderful way to incorporate fresh garden herbs into everyday cooking.
  • Be sure to squeeze the zucchini thoroughly before mixing to help the patties hold together and develop a crisp exterior.
  • These patties can be served as an appetizer, side dish, or light lunch and are an excellent way to use an abundant zucchini harvest.
  • If your garden is producing zucchini faster than you can use it, shred and freeze portions for future batches.

From seed to skillet, recipes like these celebrate everything we love about summer gardening: fresh flavors, homegrown ingredients, and the satisfaction of bringing the harvest directly from the garden to the table.
