Growing Sunchokes: A Tasty, But Tenacious, Fall Root

Sunchokes (also called Jerusalem artichokes) are a delicious, nutty-tasting tuber that can add depth to soups, roasts, and salads. They’re easy to grow, hardy, and perfect for fall harvesting—but they come with one big caveat: they can take over your garden if you’re not careful.
