Drowning in Zucchini? Turn It Into This Incredible Candied Walnut Zucchini Bread

Every gardener knows the feeling.

You walk through the garden and spot a zucchini that somehow wasn't there yesterday. Then another. And another. Before long, your kitchen counters are overflowing, your neighbors are avoiding eye contact, and you're wondering how many zucchini recipes one family can possibly eat.

The truth is, zucchini has a way of taking over during the peak of summer. And while the smaller squash are perfect for grilling, sautéing, and adding to fresh meals, those giant zucchini hiding beneath the leaves often leave gardeners scratching their heads.

Fortunately, there's one delicious tradition that never goes out of style: zucchini bread.

This isn't just any zucchini bread, though.

The grated zucchini keeps every slice incredibly moist while warm cinnamon and vanilla create that classic homemade flavor everyone loves. The real magic comes from the candied walnuts folded into the batter and sprinkled on top before baking. They add a sweet crunch and a touch of elegance that takes this humble garden recipe to the next level.

One of the biggest challenges with zucchini bread is all the shredding. If you're processing several large zucchini at once, a good food processor can save an incredible amount of time. I use my Breville Food Processor, and it makes quick work of even the biggest garden harvests. You can check it out here → https://amzn.to/4vcywd3

It's the kind of loaf that disappears quickly at family gatherings, makes a thoughtful gift for friends, and pairs perfectly with a morning cup of coffee.

So instead of quietly leaving bags of zucchini on your neighbor's porch this year, bake them a loaf of zucchini bread instead. Trust us—they'll be much happier to see you coming.

  • 1 teaspoon sea salt
  • 1½ cups cane sugar
  • 1 cup vegetable oil, plus more for greasing pans

Instructions

  1. Preheat oven to 325°F and grease two 8x4-inch or 9x5-inch loaf pans.
  2. In a large bowl, whisk together the flour, cinnamon, baking powder, baking soda, and salt.
  3. In a separate bowl, whisk together the sugar, vegetable oil, eggs, and vanilla until smooth.
  4. Fold the grated zucchini into the wet ingredients.
  5. Add the dry ingredients to the wet ingredients and mix until just combined.
  6. Fold in the chopped candied walnuts.
  7. Divide the batter evenly between the prepared pans and sprinkle additional candied walnuts on top.
  8. Bake for 40–55 minutes, or until a toothpick inserted into the center comes out clean and the tops spring back when lightly touched.
  9. Allow the loaves to cool in the pans for 10 minutes before transferring them to a wire rack to cool completely.

Storage Tips

This zucchini bread stays moist for several days when stored in an airtight container. It also freezes beautifully. Simply wrap cooled loaves tightly in plastic wrap and foil and freeze for up to three months.

Whether you're harvesting your own zucchini or picking up fresh squash from the market, this recipe is one of the tastiest ways to celebrate the season—and perhaps the best solution for a garden that just won't stop producing.
