1 large egg

1/2 cup panko breadcrumbs

1 tablespoon fresh parsley, chopped

Salt and pepper to taste

For the Remoulade Sauce

1/2 cup mayonnaise

1 tablespoon Dijon mustard

1 tablespoon lemon juice

1 teaspoon paprika

1 teaspoon hot sauce

Salt and pepper to taste

For Serving

Brioche buns, toasted

Fresh garden lettuce leaves

Directions

Tear Lion's Mane mushrooms into small pieces resembling lump crab meat.

Heat olive oil in a skillet and sauté mushrooms until moisture evaporates and the mushrooms become lightly golden. Allow to cool.

In a large bowl, combine mushrooms, egg, breadcrumbs, mayonnaise, Dijon mustard, Old Bay, parsley, salt, and pepper.

Form mixture into patties and refrigerate for 20 to 30 minutes.

Cook patties in a lightly oiled skillet over medium heat for 3 to 4 minutes per side until golden brown and crisp.

Meanwhile, whisk together all remoulade ingredients until smooth.

Spread remoulade on toasted brioche buns.

Layer garden lettuce on the bottom bun, add a Lion's Mane crab cake, and top with additional sauce if desired.
