Celebrating the Last Lettuce of Spring: A Garden-to-Table Farewell
As temperatures rise and summer settles into the landscape, gardeners know it is nearly time to say goodbye to one of spring's most dependable crops. Lettuce, which thrives in cool weather, begins to bolt and lose its sweetness as the days grow warmer. Before the final harvest fades away, it deserves a proper celebration.
In today's culinary world, from home kitchens to the bright lights of MasterChef, chefs are proving that simple ingredients can become extraordinary when handled with care. Presentation, freshness, and technique often matter more than expensive ingredients. A beautiful plate can elevate even the humblest harvest.
That philosophy inspired this week's garden-to-table meal. The last tender leaves of garden lettuce became elegant wraps filled with a savory mixture of ground chicken, fresh ginger, garlic, and Asian-inspired flavors. Topped with garden jalapenos and nestled into crisp lettuce cups, the dish delivers restaurant-quality presentation while showcasing the freshness of homegrown produce.
There is something special about harvesting lettuce just moments before serving it. The leaves are crisp, vibrant, and full of life, a stark contrast to greens that have traveled hundreds of miles to reach a grocery store shelf. It's a reminder that some of the best meals begin not in a restaurant kitchen, but in the backyard garden.
Arranged on a serving platter, these lettuce wraps could easily pass for a MasterChef appetizer. Yet their appeal lies in their simplicity. Fresh lettuce, flavorful chicken, and a handful of pantry ingredients come together to create a meal that is both light and satisfying. As lettuce season draws to a close, this recipe offers a delicious way to honor the harvest.

2 tablespoons low-sodium soy sauce
2 tablespoons rice wine vinegar
1 tablespoon Sriracha (optional)
1 teaspoon sesame oil
For the Filling
1 tablespoon extra-virgin olive oil
1 medium onion, diced
2 cloves garlic, minced
1 tablespoon freshly grated ginger
1 pound ground chicken
1/2 cup canned water chestnuts, drained and sliced
2 green onions, thinly sliced
For Serving
Large garden-fresh lettuce leaves, washed and dried
Jalapeños
Directions
In a small bowl, whisk together the hoisin sauce, soy sauce, rice wine vinegar, Sriracha (if using), and sesame oil. Set aside.
Heat olive oil in a large skillet over medium heat. Add the onion and cook until softened, about 5 minutes.
Stir in the garlic and ginger and cook for another minute until fragrant.
Add the ground chicken and cook until browned, breaking it into small crumbles as it cooks.
Stir in the water chestnuts and prepared sauce. Simmer for 2 to 3 minutes until everything is well coated and heated through.
Remove from heat and stir in the green onions.
Spoon the warm filling into fresh lettuce leaves and serve immediately. Top with Garden Fresh Jalapenos.
As the final heads of lettuce disappear from the garden, meals like these remind us why we plant in the first place. Fresh ingredients, harvested at their peak and presented with care, can transform an ordinary dinner into something worthy of a MasterChef challenge. It's a fitting farewell to spring's most delicate crop, and a delicious bridge between the garden and the table.
