Butternut Squash Soup with Crispy Croutons & Fried Sage

 

Butternut Squash Soup 🍲

Perfect for chilly days!

Ingredients:

  • 1 medium butternut squash, peeled & cubed 🥄
  • 1 onion, chopped 🧅
  • 2 garlic cloves, minced 🧄
  • 1 tbsp olive oil 🌿
  • 4 cups vegetable broth 🍶
  • 1/2 cup coconut milk or cream (optional) 🥥
  • 1 tsp cumin 🌟
  • 1/2 tsp cinnamon 🍂
  • Salt & pepper, to taste 🧂
  • Red Pepper flakes

Instructions:

  1. Sauté: Heat olive oil in a pot, cook onion for 5 mins, add garlic for 1 min.
  2. Boil: Add cubed squash, pour in broth. Simmer for 15-20 mins until tender. 🍲
  3. Season: Stir in cumin, cinnamon, salt, and pepper.
  4. Blend: Puree with an immersion blender (or in batches in a regular blender).
  5. Finish: Add coconut milk or cream for extra richness! 🥥

Serve: Top with crispy croutons, fried sage leaves, and red pepper flakes.
