Summer Peach & Burrata Salad with Fennel and Basil

Peach, Burrata & Fennel Salad

This fresh Peach, Burrata & Fennel Salad is everything I love about summer on one plate. Sweet, juicy peaches pair beautifully with crisp fennel, fresh basil, creamy burrata, and toasted almonds. A little balsamic brings it all together for an easy salad that feels elegant enough for entertaining but simple enough for any summer meal.

Ingredients

8 ripe peaches, sliced

1 fennel bulb, thinly sliced

½ cup fresh basil, roughly chopped

½ cup sliced almonds, toasted

1 tablespoon white wine vinegar

Olive oil, for drizzling

Salt, to taste

Freshly ground black pepper, to taste

Burrata cheese

Balsamic vinegar or balsamic glaze, for finishing

Directions

Prepare the Peach & Fennel Salad

Slice the peaches and place them in a large bowl.

Thinly slice the fennel bulb. A mandoline works beautifully here to create delicate, crisp slices. Chop some of the tender fennel fronds and add them to the bowl along with the fennel.

Roughly chop the fresh basil and add it to the peaches and fennel.

Dress the Salad

Add the white wine vinegar and a generous drizzle of olive oil.

Season with salt and freshly ground black pepper to taste.

Gently fold everything together so the peaches and fennel are lightly coated without breaking up the fruit.

Plate & Finish

Transfer the peach and fennel mixture to a serving platter.

Add the burrata, either whole in the center or gently torn into pieces throughout the salad.

Drizzle with a little more olive oil and balsamic vinegar or balsamic glaze. Finish with salt, freshly cracked pepper, and the toasted sliced almonds.

Serve immediately and enjoy!
