Garlic Scape Butter

Yield: About 1 cup

Ingredients

1 cup garlic scapes, roughly chopped

2 sticks unsalted butter, softened to room temperature

2 teaspoons coarse salt (Pink Himalayan salt works wonderfully)

Instructions

Add the chopped garlic scapes to a food processor and pulse until finely minced.

Add the softened butter and salt.

Process until the mixture reaches your desired consistency, scraping down the sides as needed.

Transfer the butter to an airtight container and refrigerate until ready to use.

Serving Suggestions

Spread on warm French bread, melt over grilled vegetables, toss with pasta, or finish a grilled steak with a generous pat. The possibilities are endless!

Storage

Store in the refrigerator for up to 1 week. For longer storage, freeze the butter in ice cube trays. Once frozen, transfer the cubes to a freezer bag for easy, portioned use whenever you need a burst of garlicky flavor.
