Garden-Style Vichyssoise Recipe | Chilled Lettuce, Potato & Leek Soup

Garden-Style Vichyssoise 🥬🥔💚

A fresh garden twist on the classic French favorite! Traditional vichyssoise is made with potatoes and leeks, but this version celebrates the garden harvest with crisp lettuce, homegrown potatoes, and leeks simmered in vegetable stock, then blended until silky smooth. Served chilled and topped with crispy homemade croutons, it's light, creamy, and wonderfully refreshing on warm summer days.

Ingredients

For the Soup

2 tablespoons olive oil or butter

2 large leeks, cleaned and sliced

1 medium onion, diced

1 pound homegrown potatoes, peeled and diced

4 cups vegetable stock

4 cups garden lettuce, roughly chopped

1 cup heavy cream (or plant-based cream)

Salt and black pepper, to taste

Instructions

Heat the olive oil or butter in a large pot over medium heat.

Add the leeks and onion and cook until soft and fragrant, about 5–7 minutes.

Stir in the diced potatoes and vegetable stock. Bring to a gentle boil, then reduce heat and simmer for 20 minutes, or until the potatoes are tender.

Add the chopped lettuce and cook for 2–3 minutes, just until wilted.

Blend the soup until completely smooth using an immersion blender or countertop blender.

Stir in the cream and season with salt and pepper to taste.

Chill the soup in the refrigerator for at least 2 hours.

Make the Croutons

Heat olive oil in a skillet over medium heat.

Add cubed bread and a pinch of salt.

Cook, stirring frequently, until golden and crispy.

To Serve

Ladle the chilled soup into bowls and sprinkle generously with the crispy breadcrumbs. Garnish with extra sliced leeks, fresh herbs, or edible flowers from the garden if desired.

Notes

Best served well chilled.

Butterhead, romaine, or leaf lettuce all work beautifully.

For an extra garden-fresh flavor, add a handful of fresh chives or parsley before blending.
